Taste: Full and smooth at the same time, denoting a pronounced acidity from the Pinot Noir.

Grape variety: Ortrugo / Pinot Noir.
Vinification: Soft pressing with white vinification, alcoholic fermentation at a controlled temperature in stainless steel vats.
Aging: Second fermentation in the bottle and subsequent aging on the lees for a minimum of 24 months, followed by another month after disgorgement before release.
Serving temperature: 6-8 degrees Celsius.
Recommended pairings: excellent as an aperitif, with cured meats, medium-aged cheeses and shellfish.
